“I’d Like That ‘Pittsburgh Blue'”
Pittsburgh Blue in Maple Grove is the latest addition to Phil Roberts’ Parasole restaurant group, but “we’ve been serving steaks ‘Pittsburgh blue’ for 20 years down at Manny’s,” he says. It’s a point of pride that when the New York Times’ Brian Miller reviewed Manny’s, he wrote, “‘I asked for my steak to be done Pittsburgh blue and the waiter didn’t bat an eye. He brought the steak back nicely charred on the outside and blood rare in the middle.’” (That’s “black and blue” to us Midwesterners.)
Pittsburgh Blue’s name derives from a bit of lore about steel workers charring steaks on the steelworks’ furnaces. For Maple Grove’s working stiffs (and shoppers), Pittsburgh Blue serves lunch starting November 12.
