Matt Joyce saw a gap in the grocery store dip section—and an opportunity for toum, a traditional Lebanese garlic sauce he grew up with. Now, after a decade of research and development—from selling at local farmers markets to iterations of rebrands to dabbling in food science to finesse at scale—he can claim the title of fastest-growing Minnesota company according to Inc. magazine. His Toom brand is now sold at Target, Costco, Whole Foods, and Cub. “It was the 10-year R&D foundation, not cutting any corners, really making a product that is authentic” that accounts for his success, he explains. “We’re just taking that category and making it accessible and convenient to enjoy at home here in the States.”
