After 20 years with Caribou Coffee, Emily Heuring is taking a break—but she’ll be back, she reassures her teammates, after a company-provided sabbatical recognizing her achievements in design and construction. Heuring began her career as a project manager with Twin Cities-based Wikus Architects, managing chain restaurant accounts, but at Caribou she’s truly made her mark. In the past year or so, she has been instrumental in the Brooklyn Center-based coffeehouse giant’s “smart growth” approach to location development, minimizing the impact on local communities and the environment as Caribou expands its footprint in the southeastern United States.
