A former standup comedian, Nick Kosevich is never at a loss for words. It served him well as a bartender at the standard-setting Town Talk Diner, and it helped him create the nationally recognized Bittercube, a bitters and bar consulting company that sent him to the best bars around the country. Last year Kosevich sold Bittercube to partner Ira Koplowitz to start The Drinks Apothecary with the team from Earl Giles. High up in the rafters in this new distillery and restaurant in Northeast Minneapolis, the apothecary is the lab where Kosevich tinkers with flavors to create syrups and tonics for bar use, as well as compounds and concoctions for national clients in an array of businesses.
