Jami Olson spent two decades as a bartender and restaurant manager before becoming a restaurateur. “You gotta be willing to get dirty,” she says. “And you have to do what you know.” She opened her fourth Centro in 2024, a casual Mexican concept that was a hit in both Twin Cities before expanding to the suburbs. She also opened Bina’s, a nouveau dive bar in Northeast Minneapolis, and continues to develop Hippo Pocket, a ghost kitchen manufactory of the Crunchwrap-adjacent Centro Crunch, which she hopes to roll out in stadiums, airports, and grocery stores. “The conceptualization—the creative part—is probably my favorite part of the entire business,” she says.
