TV, President Obama, the internet and social media made Matt’s Bar a national sensation, “Jucy Lucy” into a household term. Longtime GM Amy Feriancek then made it her mission to figure out a way to serve more customers from a restaurant always at capacity yet reluctant to tinker with its footprint. “I wanted to figure out how to grow my business,” she says. Her answer: a seasonal food truck. 2025 was the proof of concept, and Matt’s truck blew the doors off. “I’m still in awe of what we did,” she says. “We’re overwhelmed with requests for 2026.” The truck’s niche is public events outside the south Minneapolis bar’s immediate trade area—think Lakeville, Wayzata, a Fleet Farm parking lot. It peaked at 1,040 Jucys on one Saturday, more than the bar’s grill can handle in a day. For next year, she’s considering adding a second truck to serve smaller events, and putting finishing touches on a pitch for the State Fair.
